  • 2 large flatbread or naan
  • 12 oz cremini mushrooms, sliced
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 garlic cloves, minced
  • 1 1/2 cups shredded mozzarella
  • 1/3 cup goat cheese or feta
  • 1 tsp fresh thyme
  • 1 cup arugula

Instructions

  1. Heat oven to 425°F. Place flatbreads on a sheet pan and brush lightly with olive oil.
  2. Heat 1 tablespoon oil in a skillet over medium-high heat. Add mushrooms in a single layer and cook 5–6 minutes without crowding until browned and their moisture evaporates.
  3. Stir in garlic, thyme, balsamic vinegar, salt, and pepper. Cook 1–2 minutes until the vinegar reduces and coats the mushrooms.
  4. Top flatbreads with mozzarella, balsamic mushrooms, and goat cheese. Bake 8–10 minutes until edges are crisp and cheese is melted.
  5. Finish with arugula and a small drizzle of balsamic if desired. Slice and serve hot.
