  • 1 1/2 lb sirloin steak, cut into 1-inch pieces
  • 1 1/2 lb baby potatoes, halved
  • 1 tbsp olive oil
  • 4 tbsp butter
  • 4 garlic cloves, minced
  • 1 tsp smoked paprika
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Place potatoes in a pot of salted water and boil 8–10 minutes, until just fork-tender. Drain well and let them steam dry for a few minutes so they brown instead of steaming in the skillet.
  2. Pat steak bites very dry with paper towels. Season generously with salt, pepper, and smoked paprika.
  3. Heat olive oil in a large skillet over medium-high heat. Add potatoes cut-side down and cook 5–7 minutes until golden and crisp. Transfer to a plate.
  4. Add 2 tablespoons butter to the skillet. Sear steak bites in a single layer for 1–2 minutes per side; work in batches if needed so the pan stays hot.
  5. Lower heat to medium, return potatoes to the skillet, and add remaining butter and garlic. Toss 1 minute until the garlic is fragrant and everything is coated in garlic butter.
  6. Finish with parsley and a squeeze of lemon. Rest 2 minutes before serving so the steak stays juicy.
