Ingredients

  • 1 lb ground chicken
  • 12 butter lettuce leaves
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 cup Thai basil leaves
  • 1 red bell pepper, diced
  • 1 tbsp neutral oil
  • optional sliced chiles or sriracha

Instructions

  1. Separate and rinse lettuce leaves, then pat them dry. Keep them chilled so they stay crisp for serving.
  2. Whisk soy sauce, fish sauce, brown sugar, and lime juice in a small bowl.
  3. Heat oil in a skillet over medium-high heat. Add garlic and ginger for 30 seconds, then add ground chicken and cook 5–6 minutes, breaking it up, until no pink remains.
  4. Add bell pepper and cook 2 minutes. Pour in the sauce and simmer 1–2 minutes until it coats the chicken.
  5. Turn off the heat and fold in Thai basil so it wilts from the residual heat without turning black.
  6. Spoon the filling into lettuce cups and top with chiles or sriracha if desired. Serve immediately.
