  • 2 medium sweet potatoes, peeled and diced small

  • 1/2 red onion, diced
  • 1 bell pepper, diced

  • 3/4 cup shredded cheddar
  • 2 green onions, sliced

Instructions

  1. Cut sweet potatoes into small 1/2-inch cubes so they cook quickly. Heat 1 tablespoon oil in a large skillet over medium heat and add sweet potatoes, salt, pepper, and smoked paprika.
  2. Cook sweet potatoes 10–12 minutes, stirring often. Add a splash of water and cover for 2 minutes if they are browning before they soften. Transfer to a plate.
  3. Add remaining oil, chicken, garlic powder, salt, and pepper to the skillet. Cook 5–7 minutes until the chicken is browned and cooked through.
  4. Add onion and bell pepper and cook 3–4 minutes until softened. Return sweet potatoes to the pan and stir in barbecue sauce until everything is glossy.
  5. Sprinkle with cheddar, cover for 1–2 minutes to melt, then top with green onions. Serve as-is or over rice.
