- 4 medium Russet Potatoes
- 1 tbsp Olive Oil
- 1 tsp Salt
- 0.5 tsp Black Pepper
- 4 slices Bacon
- 1 cup Cheddar Cheese
- 0.5 cup Sour Cream

- Preheat oven to 400°F (200°C). Pierce potatoes several times with a fork. Rub with olive oil, salt, and pepper.
- Bake potatoes for 35-45 minutes, or until tender. Let cool slightly.
- Once cool enough to handle, cut each potato in half lengthwise. Carefully scoop out most of the flesh, leaving about 1/4 inch attached to the skin. (Reserve scooped potato flesh for another use if desired).
- Place potato skins on a baking sheet. Sprinkle the inside of each skin with half of the shredded cheddar cheese and half of the crumbled bacon.
- Return to the oven and bake for another 10-15 minutes, or until cheese is melted and bubbly and skins are crispy.
