  • 4 medium Russet Potatoes
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 4 slices Bacon
  • 1 cup Cheddar Cheese
  • 0.5 cup Sour Cream
  • 2 tbsp Green Onions

Instructions

  1. Preheat oven to 400°F (200°C). Pierce potatoes several times with a fork. Rub with olive oil, salt, and pepper.
  2. Bake potatoes for 35-45 minutes, or until tender. Let cool slightly.
  3. Once cool enough to handle, cut each potato in half lengthwise. Carefully scoop out most of the flesh, leaving about 1/4 inch attached to the skin. (Reserve scooped potato flesh for another use if desired).
  4. Place potato skins on a baking sheet. Sprinkle the inside of each skin with half of the shredded cheddar cheese and half of the crumbled bacon.
  5. Return to the oven and bake for another 10-15 minutes, or until cheese is melted and bubbly and skins are crispy.
  6. Remove from oven. Garnish with a dollop of sour cream, remaining crumbled bacon, and sliced green onions. Serve immediately.
